Experiencing Japan's FIRST Hot Sauce Bar!

I found a hot sauce bar in Harajuku, Tokyo, and there was no way I was leaving without trying some sauces. Ben from Mastodon Hot Sauce told me about Hot Sauce Bar Tokyo before my two-week trip to Japan. I reached out ahead of time, and Sarah and the team made me feel right at home. Their shelves were full of sauces from small makers around the world, which is exactly the kind of thing I love to see. Since I was in Japan, I focused on yuzu hot sauces. I tried Yuzu Heaven from Mellow Habanero, MOTOI, Flagrant, and a few others on wings at the bar. I brought some home for spoon tastings, too, so I could give each one a closer look. They all use yuzu, but the flavors and heat levels go in completely different directions. Mellow Habanero brought the most heat for me at the bar. I also tried honey-marinated habanero slices on yakitori, which are part of what goes into the bar’s Golden Hot Honey Mustard. Then, to finish things off, I’m tasting an unusual yuzu umeboshi hot sauce I found at a specialty shop in Uji.
